Pigs are common in folklore around the world often symbolizing luck, overall good fortune, wealth, honesty, general prosperity. While pigs might have negative connotations today, originally they represented someone who was laid back and enjoying life.  I love the saying "when pigs fly" because it implies that the impossible IS possible!  All the pigs fly in my world.
